This pork rack has been sleeved and de-heeled, which means that the rib bones have been removed at the top. This operation makes it easier to cut the piece after cooking.
It has a very nice balance between meat and fat, and its large size allows for long, slow cooking, the best way to bring out the natural flavor of Gascon black pork.
Our purebred Black Pigs of Bigorre are raised freely in their original territory: Bigorre, on the borders of the Hautes-Pyrénées, Gers and Haute-Garonne.
