Presa Pork, purebred Iberian

Located at the front of the lomo, near the blade, the presa represents the central part of the chine. Oval in shape, it is a very red piece of meat that can easily be confused with beef.

Compared to the rest of the Iberian cuts, the presa is fatter and more tender. Moreover, it is particularly sought after for its softness which can be explained by its excellent infiltration rate.
